We recommend following these steps again to re-enable the Secure boot configuration , Secure boot , or UEFI Boot option, which you disabled in step 9, and then subsequently re-enable BitLocker if you previously had this enabled. This will remove all your personal files, apps, and installed drivers.

The S is actually a mode of operation for Windows 10, not a seperate edition. There was a seperate Windows 10S edition a long time ago, but that one is deprecated in favor of S-Mode. To install Windows 10 with S-Mode, you have to use the edition you have a license for Windows 10 Home or Pro for example. You can then enable S-Mode with an unattend file before your first boot.
